Vegetarian Russian Salad Recipe

Russian salad is prepared by combining fruits and vegetables in a thick creamy yoghurt dressing.


Thick curd – 3 tbsp

Pepper to taste

Powdered sugar – 3 tsp

Salt to taste

Apple (chopped) – ½ cup

Pomegranate seeds – ½ cup

Potato – 1

Water – 1 cup

Cabbage (shredded) – 2 tbsp

Cucumber (finely chopped) – 3 tbsp

Pineapple (finely cut) – ½ cup


Add water to a pressure cooker. Add the potato and pressure cook it for up to 2 whistles.  Allow the pressure in the cooker to settle. Open the lid and peel the skin of the boiled potato. Cut it into cubes and keep it aside.

Add thick curd in a medium-sized bowl. Crush pepper according to taste. Add powdered sugar and salt. Add apple and pomegranate seeds. Add the boiled potato cubes and cabbage.  Add cucumber and pineapple. Mix well. Serve.
