Mutton Rogan Josh



Mutton- 1 kg
Onions- 4 (thinly sliced)
Ginger-garlic paste- 2tbsp
Green cardamoms- 5
Bay leaves- 2
Mace- 2
Cloves- 6
Black peppercorns- 1tsp
Hing(asafoetida)- ½ tsp
Saunf (fennel) powder- 1tbsp
Dry ginger powder- 1tbsp
Kashmiri red chilly powder- 2tsp
Coriander powder- 1tbsp
Yogurt- 1 cup
Mustard oil- 2tbsp
Warm water- 4 cups
Salt- as per taste


1.Wash and clean the mutton. Marinate it with yogurt, 1tsp of red chilly powder and salt. Keep it aside for 2 hours.

2.After 2 hours, heat mustard oil in a pan. Add all the whole spices like bay leaves, cardamoms, cloves, mace, peppercorns along with hing (asafoetida). Fry for 2 minutes.

3.Now add the sliced onions and fry till they become light brown.Then add ginger-garlic paste and saute for 2 minutes.

4.Now add the marinated mutton pieces, red chilly powder, coriander powder and fennel powder. Fry for 5-6 minutes.

5.Add warm water, salt and dry ginger powder. Mix well and cook for another 15 minutes.

6.Now cover the pan and cook for 25-30 minutes until the mutton is completely cooked.Switch off the flame and check the mutton with a knife or a fork.

7.Once done, serve mutton rogan josh with steamed rice or pulao or Dosa.
