Cashew Halwa Recipe

INGREDIENTS

Cashew nuts (kaju) – 1 cup

Atta – ½ cup

Water – 3½ cups

Ghee – ½ cup

Sugar – 1 cup

Saffron strands – 3-4

Cardamom powder – ¼th tsp

Almonds (chopped) – ¼th tsp

PREPARATION

Add cashew nuts in a mixer jar.  Grind it into a fine powder and keep it aside.

Add water in a heated pan. Allow it to boil for 2-3 minutes on high flame.  Add sugar and mix well.  Allow it to dissolve and boil for 2-3 minutes on a high flame. Add saffron strands and allow it to boil for another minute. Remove the pan from the stove.

Add ghee in a heated heavy-bottomed pan. Allow it to melt and heat well. Add atta and the powdered cashew nuts. Stir continuously to avoid it from burning. Allow it to cook for 5-6 minutes on a medium flame, until the mixture turns brown. Once done, add the sugar syrup and mix well. Stir continuously for 4-5 minutes until the mixture thickens and starts to leave the sides of the pan. Add cardamom powder and chopped almonds. Mix well and transfer into a bowl.

Serve hot or chilled.
